Banyan Tree, Samui

But the flagship, 'Saffron', offers stunning views from its outdoor decking, and backs them up with traditional and modern Thai flavours. Lemongrass, coriander, lime, coconut, chili, galangal, tamarind... the list of fresh and exotic ingredients in this wonderful cuisine goes on and on.

To keep you busy, there are plenty of things to do. Diving is very popular, and a huge range of other watersports are also available. Samui is an island large enough to support some good cycling routes, and this is also popular. Otherwise, excursions can be arranged to one of the many cultural or natural attractions on Samui and its sister islands.
